SPAGHETTI SQUASH LASAGNA BOATS // These spaghetti squash lasagna boats are so satisfying and a healthier dinner option. I never mistake spaghetti squash for actual pasta. It has its own flavor and texture and I really love it. You can add so many different toppings to make it your own. Here’s how I made these:

You’ll Need
* 1 spaghetti squash
* 2 tbsp reduced fat cream cheese (I prefer cream cheese over ricotta but if you like ricotta, go for it.)
* ¼ cup parmesan cheese (for meat sauce) + 2 tsp (for squash)
* 2% milk shredded mozzarella cheese
* 1 tsp pesto sauce
* ½ cup jarred pasta sauce
* Ground turkey (I used 95% fat)
* Everything but the Bagel seasoning
* Salt
* Pepper

Let’s Make It
* Wash and split a spaghetti squash into two
* Add about a tbsp of olive oil to your hands and rub over the squash
* Sprinkle with salt and pepper.
* Bake on a baking sheet on 400 for about 40 minutes
* While that’s baking, brown ground turkey in a skillet
* Mix in pesto sauce, pasta sauce and 1/4 cup parmesan cheese; set aside
* Remove squash from oven and let cool slightly
* Using a fork, gently scrape the squash until spaghetti ribbons start to form
* Add 1 tbsp reduced fat cream cheese to each side
* To each side, add a tsp of parmesan cheese and a sprinkle of everything but the bagel seasoning
* Stir until well combined
* Add half of the meat sauce mixture to each side of the squash
* Top with a sprinkle of mozzarella cheese
* Broil until the top is bubbly
* Remove from oven and serve warm

This dish is so yummy. Go ahead and make it. Have you tried spaghetti squash before?
