Laap Lovers Grand Slam! Buffalo, Beef, and Pork + Northern BBQ Highlights of Chiang Mai

Do you love Laap? How many days (or hours) has it been since your last encounter? One of my favorite restaurants has a chef specializing in Laap, I love the way he makes this dish, and today I want to try one of each of the main three meats used in Laap.

We’re ordering Thailand’s famous meat salad, “Laap” is traditionally made with Pork (in the north anyways), occasionally it is raw (but not tonight) – instead I want to order one Pork, one Beef, AND one Buffalo, to see if/what the difference is in the flavor.

I also am sharing four other of my favorite lunch-time dishes, we have chili dip with fish, another meat salad made using buffalo (and fresh sour herbs), a sour fish stew, and some crispy fried skin cracklings. It all goes great with sticky rice, and this meal is a fabulous reward for the 4-hour ride I took on the gravel bike today in Mae On.
