3% Brine (optional but recommended):
• 1 gallon water
• ½ cup Kosher Salt
• 1/8 cup Granulated Sugar
• 4 Bay Leaves
• 2 Garlic Cloves
• 1 tbsp Coarse Ground Black Pepper
Georgia Gold Sauce:
• 1 ½ cups Yellow Mustard
• ¾ cup Honey
• 1 cup Dijon Mustard
• ½ cup Molasses
• 6 tbsp Butter
• ¾ cup Apple Cider Vinegar
• 4 tsp Worcestershire Sauce
• 2 tsp Onion Powder
• 4 tsp Garlic Powder
• 4 tsp Black Pepper
• 1 ½ tsp Oregano
• 1 tsp Cayenne Pepper
• ¾ tsp Cajun Seasoning
• 2 tbsp Sriracha
✨ Instructions
1. Brine (optional): Combine brine ingredients in a stock pot, bring to a boil, then remove from heat. Let aromatics steep 30 minutes. Strain and refrigerate until use. Brine chicken 12–24 hours.
2. Remove wings from brine, pat dry, and season generously with salt, pepper, garlic powder, onion powder, and smoked paprika.
3. Smoke wings at 250°F for 30 minutes. Raise heat to 375°F and flip every 20 minutes until wings reach 165°F internal temp.
4. Sauce: In a saucepan over medium heat, combine all sauce ingredients. Bring to a boil, stirring often. Lower heat and simmer until thickened.
5. Toss wings in the Georgia Gold sauce. Serve hot & enjoy!
